Rich Fruit Cake

This is a very rich cake that can be iced and served as a Christmas or Wedding cake. It’s so simple to make.

Ingredients.

1½lb of Mincemeat. 3 Large Eggs.

8oz of Butter. 6oz of Soft Brown Sugar.

12oz of Self Raising Flour. A 9 inch round cake tin.

A drop of Rum or Brandy (optional).

Beat the butter until soft then add the sugar and cream together until fluffy. Beat the eggs and add them gradually to the mixture, beating well between each addition. Sift the flour with a pinch of salt and, using a metal spoon, fold into the mixture with the mincemeat and brandy to make a fairly stiff consistency.

Turn the mixture into the tin and spread it to the sides leaving the centre with a slight hollow to allow it to rise evenly. Bake the cake on the centre shelf of a pre-heated oven at Gas Mark 4 or 350f for one and a half hours. When the cooking time is up, insert a skewer into the centre and if it comes out clean, the cake is ready. When cold you can ice and decorate.
