Toad in the hole is an English dish that will be instantly recognised by anyone who has
lived in England for any time. It is basically sausages in batter. A delicious and cheap meal that was at one time a staple of the
English cuisine.
Toad in the Hole
Take 100g (4 oz) plain flour
300ml (1/2 pint) milk (full cream)
450g (1 lb) English pork sausages
1 egg
15ml (1 tablespoon) Melted English Butter
Pinch of salt
Sift the flour and salt into a large bowl. Beat to make a smooth
batter with the egg, melted butter and half of the milk. Then stir in the remaining milk. Arrange the sausages in a shallow baking
tin or ovenproof dish. Bake in the oven at 220C (425F) for 10 minutes.
Remove from the oven and pour the batter over the sausages, bake for a further 30 minutes.
Reduce the temperature to 200C (400F) and bake for another 15-20 minutes. Serve immediately with boiled potatoes and
vegetables smothered in onion gravy.
